This lime-ginger-mint detox infusion from Fashion Cooking is just what the doctor ordered after a nice (& at times a bit hectic) spring break. I hope all of you had a great weekend! Back to the grind tomorrow.

Prep: 10mn
Infusion time: 5mn
Large pot (4 cups)
– Juice of 2 limes or 3 (depending on their size and concentration of juice)
– 3cm fresh ginger
– 1 / 2 bunch fresh mint
– 2 or 3 tablespoons of honey (I used agave)
Peel the ginger and cut into brunoise (tiny cubes). Chop the fresh mint. Place the diced ginger and chopped mint in the bottom of a teapot.
Squeeze the limes and pour the juice in a teapot. Add 75cl of boiling water. Steep for 5 minutes and add 2 or 3 tablespoons of honey to taste.
Serve hot or warm.
You can leave all the elements of the tea in the teapot, the more the better. I often add a little hot water if it has cooled.
